Nutmeg Ginger Apple Snaps

For this recipe you will need 2 cups of softened butter, half cup of granulated sugar, 6 tablespoons brown sugar, 2 tablespoons molasses, 2 teaspoons ground ginger, 1 teaspoon vanilla extract, 1 teaspoon ground nutmeg, a pinch of cloves, 4 cups of flour, 2 eggs, a pinch of salt, some apples, coarse sugar and cinnamon for sprinkling on top. In a mixer, add your butter and use a paddle attachment and cream it on medium speed. Then add the sugar, brown sugar, and molasses and beat until fluffy. Next, add the 2 eggs and vanilla extract and mix until fully blended.
In a separate bowl add the flour, cinnamon, ground ginger, nutmeg, cloves and salt. After everything else is blended completely, add this mixture very slowly while the mixer is on low speed. Add in three parts. Set oven to 325 degrees. Roll dough into medium sized balls and prepare them on a cookie sheet
Then, thinly slice your apples and place them on top of the balls by pressing firmly until the dough is past the apples.
Finally, sprinkle some cinnamon and course sugar on top of the apples and the edges of the dough. Bake for 20 minutes. Let cool for a few minutes and enjoy.
Those look delicious. I am starting to regret not bringing my mixer to college with me. Would you consider to try making snaps with another fruit?
