Cellentani Pasta with Ricotta and Parmesan
This super simple meal took 15 minutes to prepare and the bulk of that time is just boiling the noodles. All you need is a noodle type of your choosing, preferably something thicker or spiraled, some whole milk ricotta cheese and parmesan cheese, as well as some spices.
First, boil the noodles until they are fully cooked. drain the water but save about a cup of the pasta water. While draining since the noodles are separated, add 1 cup of ricotta and 1 cup of parmesan to the pot, then pour the cup of pasta water and stir until smooth. I then added various spices such as pepper, salt, some chili powder and paprika, oregano, and a bit of onion and garlic powder. Mixed it all then added the noodles back into bowl and combined everything together.
That's all it takes and then you are ready to eat and this leaves a very generous helping for leftovers or guests and basically tastes like a much fancier mac and cheese.
Do you prefer box mac and cheese over this mac and cheese? Why do you think people choose box as an easier meal if the same steps are involved?
ReplyDeleteI have been eating Kraft all my life so out of habit I would probably choose that over this if I could only have one forever. But this does involve the purchase of two extra cheeses whereas the box has the powder included so altogether this costs more but tastes great.
DeleteI loved this recipe! Most definitely going to try next time I'm cooking. As a person that adds onion and garlic powder to all my pasta recipes, I already know this is going to be delicious!
ReplyDeleteThis sounds like a great twist on an old fav. Definitely going to give it a try.
