Breakfast Burritos
I am very happy with how these came out and now might need to make sure I have them more often. The ingredients are ground beef, eggs, peppers, tomatoes, jalapeños, potatoes, sour cream, spices, and large flour burrito tortillas. First, I sliced up the potatoes into cubes then started heating them up with a little olive oil in the pan. Next, I crack a few eggs into a bowl, whisk, and add a bit of black pepper, chili powder, paprika, and seasoned salt. I then add the eggs to the potatoes and start scrambling them.
Just before I add the eggs to the pan, I start cooking my beef in a separate pan. I just try to be efficient with my time and not to do one thing after the other. So now that I have beef heating up and eggs cooking I slice some peppers, cherry tomatoes, and jalapeños. Once the meat is cooked I throw on my spices and I actually use the same ones from my ground turkey recipe as it works great with different meats.
Once the meat is done I threw out in with the eggs and potatoes and then started cooking the peppers. I sprinkled some black pepper and salt onto them and got them pretty crispy as I like them. I then threw the peppers into the other pan along with everything else.
After all of this was finished, I put some sour cream on my tortilla, placed the filling and wrapped the burrito up. It was delicious.
This looks amazing! Burritos are so versatile. Since college has started, I've tried to find different recipes that I can easily make with some of the same ingredients, so I'll add this one to the list!
