Oven Roasted Chicken and Potatoes

 Oven Roasted Chicken and Potatoes

To start this super easy meal defrost some chicken breasts and place them in a baggie with olive oil, a lot of Italian seasoning, some garlic powder, onion powder, salt, pepper, and any other spices you may want for a little extra flavor such as some chili powder or paprika, or a bit of red pepper for spice.

Leave the chicken to marinate for a few hours in the fridge. Once ready to cook, you can wash your potatoes and slice them into smaller pieces. In a bowl, mix some olive oil, and any combination of the same spices you used for the chicken. You can then place these on a skillet later down the line for faster preparation or place them next to the chicken in a pan and let them cook together.

Set oven to 350 degrees, place your chicken, and potatoes if cooking together, in a pan and cook for about 30 minutes. Halfway through you can flip some of the potatoes around but that is not necessary.

This is a great meal that is super simple and tasty and you can even pair it with other sides such as the Cheesy Garlic Butter Buns as seen here!

  1. This looks good as well as easy. Once I get over my fear of cooking chicken I will for sure have to try this.
