Sausage w/ Fried Rice, Peppers, and Broccoli



    This meal is really simple to make and although you're doing a lot of things, you are preparing it all at the same time so it does not take long. I buy some spicy sausage at Walmart or Aldi, some peppers, some bags of frozen broccoli, and typically I always have eggs, spices, and rice on hand because they last a good while. When I get home after the grocery store the first thing I do is separate my sausages into multiple baggies to freeze so that I don't need to thaw them all together, I can just do two at a time. 

    When ready to prepare, I first place my defrosted sausages in a glass pan and put them in the oven at 450 degrees for 30 minutes (I like them a little crispy and burnt). As soon as I am done with that I clean my rice and put the desired amount in the rice cooker, this takes about 20 minutes. With my rice and meat both heating, I start cooking the vegetables. I cut my peppers in strips, defrost my broccoli, and start seasoning them. I just season by eye with no set measurements. First, I put pepper, then seasoned salt, onion powder, garlic powder, chopped onions, some paprika, and a little chili powder. Place them on a skillet with olive oil and let them roast. I mix the vegetables up every minute until I can set the heat on low and let them get crispy, during this time I crack two eggs and scramble them then put a few of the same spices I used on peppers to mix into eggs. 


      After 20 minutes the rice is done and vegetables are done, so I place the vegetables aside and add my rice to the pan, with some oil, some soy sauce, and the scrambled eggs. I fry the rice for a few minutes and by the time it is near done I take the meat out. I add the vegetables back to the pan and mix everything together. 


    Lastly, I cut the sausage and throw that into the fried rice and enjoy. So, it takes 30 minutes in total to prepare with some pretty inexpensive ingredients especially because it utilizes things like rice which can be bought at the beginning of a semester and probably last until the end.

  1. Do you think buying a large quantity of food and freezing it benefits you more than buying single sized portions?
